Bistro Fresherie is a pilot project for a future chain of bistros, a new fresh gastronomic concept with its own bakery, pastry shop and Italian delicatessen. Their operations cover the whole day – from breakfast to dinner.

The first implementation defined the design for the other restaurants of the future chain – easy to remember, with elements that will be repeated in subsequent implementations, corresponding to the gastronomic concept. The interior design evokes a pleasant atmosphere of an urban bistro where one can relax during the working day. The colour scheme and the material solution match this – the simple lines of the black metal elements are complemented by solid wood. The monochromatic colour scheme gives voice to the vibrant floral installations that are part of the design and an important style element. The dark wall colour scheme, together with the lighting chosen, creates a pleasant atmosphere for evening gatherings.

The spatial layout makes use of the distinctive elements given by the building while offering multiple seating types. A bar table is placed near the large glass area and seating facing the street with floral decorations integrated into the table top. Higher tables and bench seating are positioned to give visitors a view of the entire space while the elevated seating encloses the interior space.
